March is here which also means that Mat Rats begins. Mat Rats is a wrestling camp for kids aged 5-12. Lil' E partcipated last year for the first time and loved it. We loved it too, as he would come home pooped out exhausted. The one con of Mat Rats is that it is EVERY tuesday and wednesday from 5-6:30 for the whole month. With three kids, a house to take care of, cakes, spring coming and outdoor chores I want to get to it leaves little time to fuss in the kitchen. So ontop of my list of things to do, I will be posting easy meals for busy moms. Tried and true. Nothing really fancy, but sometimes we moms need a reminder of the simpler meals we have enjoyed since we were young. And the great part is atleast for me the ingredients are ones I usually always have on hand. Hope you enjoy and I would love to hear some of your ideas for meals.
First off... HAMBURGER STROGANOFF
1/4 cup butter
1 onion, chopped (I am guilty of using dried onion as I always have it on hand)
1 clove garlic, finely chopped (again I use the pre chopped stuff)
1 lb. ground beef
1/2 tsp. pepper
1 tsp. pepper
1 8oz. can mushrooms (can use fresh if you have them)
2 T. flour
1 10oz can mushroom soup and 1 cup water
1 cup sour cream
1/4 cup minced parsley (optional)
Melt butter in fry pan at 325 degrees. Add onion, garlic, and ground beef and cook until lightly browned. Add salt, pepper, mushrooms, flour, wateer and soup. Stir throughly and cook for 20 mins. Add sour cream, top with parsley. Serve over cooked noodles of your choice. Serves 4-6.

We grew up eating something similar but it was served over toast. I made it every now and then for my kids too! Actually, some people would call it SOS :)
We make something similar too, but its just ground beef chopped onion browned together Worcestershire sauce, can of cream of mushroom soup, cup of milk till boiling add frozen peas and corn till done (about 5 min) then add instant rice cover remove from heat. And there ya have it meal in a pan that is tasty and filling! Thanks for sharing Alisha :)
